Serves 6
Dressing Ingredients:
5 tbs fresh squeezed lime juice
1/2 tsp himalayan salt
1/2 tsp freshly cracked black pepper
1 garlic clove, minced
1/4 cup fresh coriander leaves, finely chopped
1/4 cup extra virgin olive oil
1/2 tsp ground cumin
Salad Ingredients:
1 cup dry red quinoa, rinsed well
400g black beans, cooked
1 capsicum (red or green), chopped into chunks
1/4 cup fresh coriander leaves, finely chopped
2 green onions, finely chopped
1 cup corn kernels, fresh is best but can use frozen corn thawed if its all you have
1 medium avocado, diced
Place 1 cup of quinoa and 1.5 cups of water in a large saucepan, bring to the boil then cover, reduce the heat and simmer for 15 minutes. Mix up your dressing in a large jar and shake well. Once the quinoa has cooled place beans, capsicum, corn, avocado, green onion, coriander leaves and cooked quinoa in a large bowl, mix together with the dressing well.
This will keep in the fridge for a few days. yum yum yum:)
